Preheat the oven to 450°F
Combine 3/4 cup warm water sugar and yeast in a large bowl let sit until spongy. 4 – 5 minutes. Mix in 1 1/2 tablespoons of oil and a teaspoon salt. Stir in 1/4 cups flour. Turn out onto a work surface knead until smooth and elastic, adding more flour if sticking for about 6 minutes. Grease a large bowl with 1 tablespoon of oil. Add dough. Cover bowl with plastic and let rise until doubled. About 1 1/2 hours
Toss tomatoes with 1 tablespoon of olive oil. A pinch of salt and Pepper and place on a parchment-lined baking sheet. Roast in the oven for 10 -12 minutes until tender and lightly roasted.
On a floured surface, roll out dough into a thin 20-inch oblong. Place on a semolina dusted sheet pan or pizza stone. Spread Sari and sliced garlic over the crust up to 1/2 inch of the outer edge.
Place roasted tomatoes on top scattering evenly. Place pizza in the 450°F oven and bake 10-12 minutes, until the cheese has melted and the crust is crisp.
Remove from the oven. Sprinkle with torn basil leaves and drizzle with a little olive oil. Serve immediately.
